Gnocchietti di Polenta Con Pesto

Is gnocchi's more fancy cousin? Gnocchetti is a small pasta shape that, not surprisingly, resembles its namesake potato dumpling. But... wait, what? There is no potato. You heard right. This recipe calls for polenta instead and it is simply delicious!

SERVES: 6

PREPARATION TIME: 30 Mins

INGREDIENTS:

100gr butter
4 eggs
½ tsp salt & pepper (freshly ground)
a pinch of nutmeg
1 cup Squisito One Minute Instant Polenta
1 jar x 130g Colavita Pesto
2 tbsp. Auricchio Provolone Cheese Dolce, grated
2 tbsp. Auricchio Reggiano Parmigiano Cheese, grated

METHOD:

  1. Cream butter and eggs in a bowl, until frothy. Add salt, pepper, nutmeg and while using a wooden spoon, begin to slowly pour the polenta, stirring continuously, so that no lumps form.
  2. Bring to the boil 4 litres of salted water in a wide casserole. Make the gnocchetti by spooning a little bit of polenta mixture on a teaspoon and using another teaspoon allow it to drop into boiling water. Cover the casserole and cook the gnocchetti over a moderate heat for 10 minutes.
  3. Drain gnocchetti and then toss with the pesto. Add the provolone cheese and mix gently. Sprinkle with freshly grated parmesan cheese and serve.
