PREPARATION TIME: 30 Mins
½ tsp salt & pepper (freshly ground)
a pinch of nutmeg
1 cup Squisito One Minute Instant Polenta
1 jar x 130g Colavita Pesto
2 tbsp. Auricchio Provolone Cheese Dolce, grated
2 tbsp. Auricchio Reggiano Parmigiano Cheese, grated
- Cream butter and eggs in a bowl, until frothy. Add salt, pepper, nutmeg and while using a wooden spoon, begin to slowly pour the polenta, stirring continuously, so that no lumps form.
- Bring to the boil 4 litres of salted water in a wide casserole. Make the gnocchetti by spooning a little bit of polenta mixture on a teaspoon and using another teaspoon allow it to drop into boiling water. Cover the casserole and cook the gnocchetti over a moderate heat for 10 minutes.
- Drain gnocchetti and then toss with the pesto. Add the provolone cheese and mix gently. Sprinkle with freshly grated parmesan cheese and serve.
