500g Squisito Paesani Country Style Pasta
4 tbsp. Colavita Premium Italian Extra Virgin Olive Oil
1 onion, finely chopped
4 chillies, finely chopped
100g pancetta (or bacon)
½ cup red wine, Niro Montepulciano D’abruzzo
2 x 400g cans Squisito Cherry Tomatoes
50gr Auricchio Pecorino Romano cheese, grated
salt and pepper
1 tbsp. parsley, chopped
- Cook Squisito Paesani in plenty of boiling salted water until al dente. Drain.
- Meanwhile, heat oil in a saucepan over medium heat. Add onion and chillies. Cook until onions are golden brown. Add the pancetta, stir gently for 3 minutes. Then add the wine and cook until wine evaporates. Add cherry tomatoes, cook for until sauce thickens. Season with salt and pepper to taste. Add the pasta and stirring gently for 2mins. Sprinkle with parsley and pecorino romano. Serve.
