The De Cecco Method for double cooking: Cook the pasta for 50% of the "normal" cooking time as indicated on the package then drain the pasta and cool it down quickly in cold running water to stop the cooking process. Divide the pasta into portions and store it in a refrigerator for not less than three hours and not more than eight hours. When ready resume the necessary portions and complete the cooking in boiling water for one minute.
This is credit to a specific drying treatment and temperature, which helps in keeping the original shape and firmness in the finishing phase.
