A mixture of free-range Australian pork and pork fat, chilli, salt and olive oil and then filled into a natural casing. It's then cold-smoked for eight hours and hung in a cool, dry room for fermentation.
Simply cut and scoop out what you need. No need to cook before eating.
Perfect tossed through hot pasta, spread over crusty bread, add as a pizza topping, use it as a fiery stuffing for chicken or squid an enjoy on an antipasto platter.
