Puttanesca is one of many culinary specialities of Italy and is a simple, quick and delicious sauce that can be made in the time that it takes for the pasta to cook to perfection.

SERVES: 5

PREPARATION TIME: 25 Mins

INGREDIENTS:

4 tbsp. Colavita Extra Virgin Olive Oil
1 crushed garlic clove
2 Capriccio Anchovies fillets in Olive Oil
100gr Zuccato Pitted Black Olives
1 tin of Capriccio Peeled Tomatoes
1 tsp of oregano
500gr of La Molisana Spaghetti

METHOD:

  1. Heat olive oil in a saucepan over medium high. Add garlic and two anchovies, cook until garlic is golden brown. Add olives and tomatoes and cook for 10mins. While cooking, stir with a wooden spoon and crush the tomato into pieces. Add oregano.
  2. Cook pasta in plenty of boiling water as per packet instructions. When ‘al dente’ drain pasta and return to the cooking pot. Add the tomato sauce to the pasta and mix well.
