Auricchio Gorgonzola DOP Oro 'Gold' Extra creamy is one of the world’s oldest blue-veined cheeses and is made with uncooked whole cow’s milk and speckled with a homogeneous distribution of blue coloured veins. During the aging process metal rods are quickly inserted and removed, creating air channels that allow the mold spores to grow causing its characteristic veining.

Flavour: Buttery, creamy, mild, and sweet, but slightly sharp
Aroma: Mild and milky
How to use: Slicing, melting, crumbling, is great for salad dressing and adding it to grazing platters.
Pairings: Figs, pears, apples, kiwis, strawberries and honey. Also, in pasta and risotto dishes and with Valpolicella red wine.
